Chicken Spinach Artichoke Manicotti

Hi friends! I’m Kimber from The Pinning Mama. There are a few things in life I really, really love. Lazy mornings, contagious laughter from my crazy kiddos, and food. As a matter of fact, I might even give up a lazy morning to make a perfectly baked muffin to indulge in for breakfast. One of my favorite recipes though, has nothing to do with breakfast.

Spinach Artichoke Dip. I could eat it all day long {and somedays I might, but you won’t tell, right?} In my opinion, spinach artichoke dip can be good… or it can be GREAT! And GREAT Spinach Artichoke dip just may be life changing. This spinach artichoke dip is one of those that disappears at parties, and subsequently causes people to stalk you down for the recipe. I actually started making it in pretty enormous quantities, because I discovered that not only does it make for one heck of an appetizer, but the left overs can turn into some pretty amazing easy weeknight meals, and that is what I want to share with you today.

When you combine this spinach artichoke dip and a bit of shredded chicken, stuff it in a manicotti shell, top with sauce and cheese and bake, you just made yourself a pretty amazing dinner in only a few minutes. I mean even those of us who LOVE food, don’t love the daily grind of “what’s for dinner tonight…” So when you can take leftovers and repurpose them into something that tastes like anything but leftovers, looks pretty fancy, and is loaded with vegetables and protein, I’d call that a great justification to eat more spinach dip!

So here is what you need:

  • 8 Manicotti Shells
  • 2 cups Spinach Artichoke Dip
  • 1 cup Shredded Chicken Breast
  • 1 1/2 cups Pasta Sauce (or Tomato Basil Soup)
  • 1 cup Mozzarella Cheese

First cook the manicotti shells per the package instructions. Once they are cooked, drain them and run them under cool water.

Next mix the spinach dip and the shredded chicken together in a bowl. If you want to make life even easier, one trick I like to use is to cook a family pack of chicken and use this super simple method to shed it in seconds. Package up the shredded chicken in meal sized portions in freezer bags and pop them in the freezer. Then you can pull out a bag of shredded chicken anytime you need to make a quick and easy dinner and it is cooked, prepped, and ready for you.

Spinach Artichoke Manicotti recipe

Spread about 1/2 cup of the pasta sauce on the bottom of a glass casserole dish. You can use whatever tomato based sauce you usually buy at the store, or if you have left overs of this Creamy Tomato Basil Soup, it also tastes absolutely heavenly with this dish and makes a great substitution.

Use a spoon to stuff the spinach-chicken mixture into each shell and place them side by side in the dish.

Pour the remaining sauce over the top of the manicotti. Feel free to use more or less sauce to your preference. Sprinkle the cheese to top.

Bake the manicotti at 375˚F for 20-30 minutes or until it is heated through and the cheese is bubbly.
