Frozen Pink Lemonade Pie

I am so excited to be guest posting for Kristyn today!  My name is also Kristen (Great Name!) and I blog at Six Sisters’ Stuff.  I have been blogging with my sisters since February 2011. We love to share easy family recipes, crafts and ideas!
My husband LOVES anything and everything with ice cream in it. He had been describing Pink Lemonade pie for awhile and I decided to finally found the recipe for him. I am addicted to ice cream when I’m pregnant and this one hit the spot!
Frozen Pink Lemonade Pie

Frozen Pink Lemonade Pie

Ingredients:

2 Pre-made Graham Cracker Crust

1 quart (4 cups) vanilla ice cream

6 oz or 1/2 can of a 12 ounce frozen pink lemonade concentrate1 container (4 oz) frozen whipped topping, thawed (I used light cool whip)
Red food coloring, if desiredLemon or lime peel, if desired

Directions:

In a large bowl, mix ice cream, lemonade concentrate, whipped topping and a few drops food color. Spoon and spread ice-cream mixture into the crust

Freeze until firm, about 4 hours. Let stand at room temperature a few minutes before cutting. Garnish with lemon peel.

For yellow lemonade pie, replace pink lemonade concentrate with regular lemonade concentrate, and add a few drops of yellow food color.

    This pie looks absolutely delicious and refreshing!!
    I’ve read over the directions a few times and don’t see where or why the second crust is used. Does this recipe make two pies and that’s why it calls for 2 graham cracker crusts? I’m assuming it does but wanted to check to be sure. Thanks for your help!
