This savory hamburger dip is always a hit at parties. It’s cheesy, hearty, and made with only 4 ingredients!

We love to have some tasty appetizers on hand for company or family nights, and this hamburger dip makes a frequent appearance. It’s one of our easiest dip recipes and uses Velveeta and Rotel, just like our Velveeta Spinach Dip.

So Simple and Delicious

This hamburger dip recipe is one we have at many family functions. It’s amazing!!!

It can be served with Tortilla Chips or Fritos. We make it a ton when we are enjoying Mexican food and when we do, people usually put this cheesy dip on their tacos too!

If you are looking for a delicious and simple appetizer to enjoy at some upcoming holiday functions, I definitely recommend this dip.

Quick Prep!

BEEF. In a large skillet cook and season beef, and drain excess grease. Keep it in the pan.

BLEND. Pour salsa into a blender and mix until smooth (this is an optional step, skip if you like the chunks).

MELT + MIX. Put salsa, Rotel, and Velveeta in the pan and cook until incorporated, melted, and heated through. Enjoy with Tortilla Chips and be prepared to not be able to stop eating!

Slow cooker instructions. After the meat is cooked and the salsa is blended, place in a slow cooker on medium-high for at least 2 hours or until melted together.

VARIATIONS

Here are some of our favorite ways to switch up this hamburger dip recipe!

  • Meat. Substitute hamburger with ground chicken, ground turkey, or ground sausage.
  • Spice. For more spice add cayenne pepper, sliced jalapenos, chili powder, or red chili flakes.  
  • Cheese. Substitute the Velveeta with equal parts cream cheese and shredded cheddar cheese. 
  • Liquid. Do not drain the can of Rotel. The recipe relies on the extra liquid to get the right texture.

Recipe Tips

Use leftover meat, or change up your Rotel dip with ground beef with these simple tips.

Microwave. Use a microwave-safe dish. Add salsa, tomatoes, and Velveeta cut into cubes. Microwave on HIGH for 3 minutes. Stir and microwave for 2 more minutes. Stir until smooth then add the cooked hamburger. 

To keep velveeta hamburger dip from getting hard:

  • Serve it straight out of the slow cooker.
  • Only put out a small portion of dip at a time.
  • Use a chafing dish (food warmer).

Textures. If it’s too thick, add a little milk.

If it’s too thin, add more cheese. Or use flour or cornstarch. In a separate bowl place ½ cup of cheese sauce and mix in 1 tablespoon of cornstarch or flour. Mix until smooth then return it back to the main sauce.

Leftover meat can be used to make this cheese dip with meat. Reduce the amount of ground beef used according to how many hamburgers you have. Chop the burgers up and mix them in with the browned ground beef.

Serve hamburger dip with homemade tortilla chips.

Storing Info

STORE leftover velveeta cheese dip with meat in an airtight container in the fridge for 3-4 days.

FREEZE Rotel Dip with ground beef for up to 6 months. However, the texture may become a little bit grainy.

To reheat thaw, if applicable, and heat in the microwave or skillet.

Serving suggestions. Tortilla Chips and dip is a delicious food marriage, but crackers will also work. Or try vegetables such as celery, bell peppers, and carrots.

Recipe FAQ

What if I don’t have Rotel?

Instead of a can of Rotel tomatoes use a can of diced tomatoes and a can of diced green chilies for an easy swap.

Does this hamburger dip freeze well?

I think this dip is best fresh or stored in the fridge for a couple of days, but it can be frozen for up to 6 months. The reason I don’t love freezing this dish is because the texture can become very grainy which won’t give you that smooth and cheesy dip when you reheat it.
