I can’t believe it is that time again…. SUMMERTIME!! I am so excited. It is going to be a hot one here in Arizona, and this Spicy Watermelon and Avocado Salad is just the kick we need to get the Summer started. Salad is one of my favorite things to make during the Summer because it requires little to no cooking, has a quick assembly time, looks and tastes amazing and is not super expensive to make. My husband has become the guru of picking out red, juicy watermelons, and he did just that for this salad.
I know it may sound a weeee-bit strange to combined sweet, juicy watermelon and spicy jalapeno dressing together, but believe me it works. I know that jalapeno’s generally equate to HOT, but with the diced up creamy texture of the avocado, the hint of mint and basil and splashes of lime juice that “hot” turns into mild deliciousness. Summertime is a time to unwind, relax, have fun and create new things in the kitchen and this Spicy Watermelon and Avocado Salad hits all the marks. It really is a simple salad to make that will please your family and friends on a nice Summer day. If you want to sweeten it up a bit you could add in some yellow raisins or even through in some extra crunch with walnuts or pecans.
Salad is one of those basically delicious food groups that allows you to bring all kinds of flavors and fun together in one big bowl. I promise this Summer is going to be a blast and adding this Spicy Watermelon and Avocado Salad to your backyard BBQ play book will be loved and eaten by all.
- watermelon-any size
- ½-thinly sliced red onion
- reduced fat feta cheese
- 1-avocado cubed
- 1-sprig of mint-diced
- 1-sprig of basil-diced
- ½-bag of baby spinach leaves
- ⅓-cup of extra virgin olive oil
- juice of 1 lime
- 1-jalapeno - sliced
- ½-teaspoon fresh crushed garlic
- salt & pepper-to taste
- In a small bowl, whisk together dressing ingredients and set aside.
- Cut and cube your watermelon, place in a large bowl and add a few pinches of salt and juice of half a lime.
- Cut and cube the avocado, and place in bowl with watermelon.
- Place remaining salad ingredients into the bowl and toss lightly with desired amount of dressing.
- Sprinkle with feta cheese
- Distribute evenly on 4 plates, Eat and Enjoy!
