Zucchini Soup Recipe from Kristen Duke Photography

Hello friends! My name is Kristen, and I blog all sorts of craziness at Kristen Duke Photography.

My hubby and I like to build custom furniture, I love big parties, and who doesn’t love a fabulous new recipe? Along with all of that, I like have written 2 beginner photography books and share lots of photo tips. I’m sharing a hearty & delicious soup with you today. But first, I’ve got a few questions from Kristyn to answer:

1 – What is your favorite holiday and why?

I think everyone loves the magic of Christmas, but I get CRAZY over Halloween. I think it’s so fun to get into the spiders and bats and black and orange. Not big on the gross bloody Halloween stuf.

2 – What is your favorite Christmas Tradition?

 In our family, we started a pajama drive where everyone (including mom and dad) gets their jammies on, and we drive around to see the Christmas lights. We also prep treats for friends and ring the doorbell and RUN!

3 – What is your all-time favorite Christmas Movie?

We watch A Christmas Story every year–we love Ralphie!

4 – What has been the best present you’ve ever received and why?

Hmmm, that’s tough. The best presents are always surprises. Last Christmas, my hubby surprised me with a giant spoon to go along with my giant fork hanging in my kitchen. I thought it was so fun, I didn’t even realize the store made a maching spoon!

5 – Why do you blog?

 I love connecting with others and sharing the fun things I’ve done, and getting feedback that it made a difference in their lives!
Onto my Christmas in July tradition. I make this delicious soup for a friends lunch each year because my hubby doesn’t like soup or zucchini’s, but my girlfriends LOVE it! Super hearty. This is how I set up my table:

I first chop up the fresh zucchini’s and toss them in a pot with some oil, butter, and garlic til they soften a bit.

Then add the ground sausage and tomatoes…

then toss some cheese on top at the end. SO YUMMY!

Zucchini Soup

6 Tbsp olive oli
1/4 garlic powder/salt
5 fresh zucchini
8 oz. cans tomoato sauce
16 oz. can diced peeled tomoatoes
1 Tbsp butter
1 tsp onion powder
1 lb. ground sausage
16 oz. shredded colby jack cheese
Cook ground sausage, set aside. Cut up fresh zucchini into cubes. Cook zucchini in oil, butter, garlic, onion until soft. Throw in cooked sausage, tomato sauce, diced tomoatoes, and a little water if needed. Simmer until hot. Add shredded cheese at the end just before serving. *I don’t like onions, so I use onion salt, but for the lovers, you can cook them with meat or zucchini.

This is for 4-5 people, I double this for a group of 10. Very hearty and filling!

    Silly Zucchini hating husband… doesn’t he know they are delicious. He must has sent my hubs the memo too though .LOL. This is so going on the menu. Thanks
