Happy August Lil’Luna friends! It’s Gina from Kleinworth & Co. & I am back again with a quick side dish that is great for large gatherings. I created this Black Bean & Corn Salad because I wanted a bright & colorful side dish that was simple to make & would be filling enough for my ever growing kids who can never seem to get enough food. I didn’t really have a particular recipe in mind when I created this. I just started with corn & went through the color palette in my head & finding things that worked. I am pleased to say that it is delish – the whole family loved it. I’m sure you will to.
With this dish it’s easy to throw more in or omit things or substitute with others to change it up to fit your taste. I started with the yellow of the corn & I knew I wanted to have black beans in there. I added red with the cherry tomatoes, orange with the sweet pepper & the spinach worked great for adding that complimenting pop of green. Toss in a little feta cheese to bring all those colors together & you have one tasty side.

This recipe makes a large quantity.
You could easily half the recipe if you have a smaller family or you don’t want leftovers.
This worked great along with our bbq ribs. We had enough for the 5 of us with leftovers to be enjoyed the next night too.
This would be a wonderful addition to a pot luck or block party.
- 2 (15.25 ounce) cans black beans - drained & rinsed
- 32 ounce bag corn - cooked & slightly cooled
- 10 ounces cherry tomatoes - halved
- 1 large orange sweet pepper - finely diced
- 2 cup spinach leaves - chopped
- 3 tbsp Parmesan cheese
- 4 ounces feta cheese
- ¼ cup olive oil
- 3 tbsp garlic powder
- salt & pepper to taste
- Combine all prepared ingredients to large bowl - toss well to coat with oil & seasonings.
- Chill in refrigerator for about 20 minutes prior to serving.
