Best Breakfast Tacos

If you like Breakfast Burritos, you will LOVE these breakfast tacos. It’s essentially the same yummy ingredients as a breakfast burrito but in cute mini taco form! You probably don’t typically think of eating tacos for breakfast, but I promise this breakfast taco recipe will change your mind.

Breakfast tacos are great for serving a crowd. If you have lots of guests staying at your house, this is the perfect meal to wake them up. This also makes a great meal for feeding hungry kids before the school time rush! These tacos will keep them satisfied and full until lunchtime rolls around.

You can really include any ingredients you like in these breakfast tacos! The possibilities are endless. So enjoy!!

How to Make Breakfast Tacos

There are so many different ingredients you can use for these best breakfast tacos, but this recipe calls for just a few basic ones!

Feel free to add in different veggies, cheeses, or proteins, but whatever you do, make sure you have really good tortillas—that makes all the difference. I love to make my own Homemade Tortillas and I also like using the uncooked tortillas from the refrigerator section.

EGGS. Scramble eggs in a skillet over medium-low heat. Add cheese, salt, and pepper (plus peppers if wanted).

POTATOES. Cook up hashbrowns and bacon separately. To make from scratch you can refer to this recipe for Homemade Hashbrowns or for Breakfast Potatoes.

BACON. Cook bacon by preheating the oven to 400°F. Line a rimmed baking sheet with tin foil (optional, but allows for easy cleanup), and layout as many bacon slices as you want on the sheet.

Bake in the oven for 18-20 minutes or until it’s cooked to your liking. It will cook perfectly on both sides, no need to flip.

ASSEMBLE. To make tacos, add eggs, a scoop of hashbrowns, and a half-piece of bacon. Sprinkle with cilantro and serve with salsa.

Variations + Storing Info

By adding just a few favorite toppings you can easily turn this recipe into your favorite flavor profile.

Mexican breakfast tacos. Here are some ingredients I like to have available:

  • Chorizo, black beans
  • Pico de Gallo, Green Salsa, sriracha sauce
  • peppers, jalapeños, avocados, green onions, fresh cilantro, tomatoes, lime juice
  • pepper jack cheese

Make a breakfast taco bar. This is one of my favorite easy breakfast ideas to feed a crowd. Prepare all the ingredients in their own bowl and lay them out in a “create your own” taco bar style! That way everyone customizes their own tacos. Win-win!

To make ahead of time. Prep and cook all the ingredients the day before you are ready to serve them. Keep the ingredients in separate airtight containers in the fridge. When you’re ready to eat the tacos, heat up the eggs, bacon, and hash browns in the microwave or oven. Then start assembling the easy breakfast tacos!

You can use smaller flour tortillas or corn tortillas depending on your preference.

What toppings go well with egg, bacon, and potato breakfast tacos?

Adding chorizo is a favorite as well as salsa, jalapenos, and avocados. See above for even more ideas.

Can I freeze breakfast tacos?

Absolutely! Place the filled tacos onto a baking sheet. To keep them closed place another sheet on top. Freeze until solid then wrap each taco individually with plastic wrap and place them together into a freezer-safe container. They can be frozen for about 4 months.

  • 2 cups cubed hash browns

    Ok i make breakfast burritos all the time and have never thought to use mini Tortillas for BREAKFAST tacos!!!! Its the perfect choice when serving with other dishes at a brunch.
