Simple and Fresh Caprese Stuffed Avocados are a twist on classic flavors. This is a perfect appetizer or side to any meal!

We love all things CAPRESE, and our new favorite are these stuffed avocados! It’s like a Quick Caprese Salad stuffed inside an avocado! Whip these up in minutes for the perfect appetizer, side, or snack.

Calling all Caprese Lovers!

I’ve been a long-time fan of anything Caprese (hello Bruschetta Caprese)! The flavor combo of tomato, basil, mozzarella, and balsamic is just too good.

I tried a caprese stuffed avocado appetizer at a restaurant once, and it looked so simple, I wanted to replicate it at home. I’m glad I tried, because my version ended up tasting just like it!

You can add as much of the Caprese ingredients as you like, but the overall gist is just carving out a little more space in your avocado to add some of the other ingredients.

It tastes delicious, and I’m glad I found another side to serve with our pasta dishes. It looks a little fancy too, but takes hardly any effort which is always a win in my book. I’m thinking I may add some chicken next time to make it a meal!

This is the balsamic glaze I like to use for Caprese recipes. It’s delicious!

How to make caprese stuffed avocados

PREP. Cut avocados in half.

FILL. Spoon out a little more of the avocado and fill with mozzarella balls and cherry tomatoes.

GARNISH + SERVE. Top with basil pieces and drizzle with balsamic glaze. Serve right away. ENJOY!

TIPS + FAQ

Make a thicker glaze: If you are worried that the glaze will drip off and make a mess you can make a slighter thicker glaze by boiling it for a little bit, which reduces it and thickens it by removing the extra water. 

Add Chicken: If you have any leftover chicken, you can easily chop it up and add it to the mix. You can also open a small can of chicken, shred it and mix in with the filling.

Avocado Tips

The avocado is really the star of this dish. Picking out a good one and keeping looking fresh and appealing is key.

  • A ripe avocado should yield to gentle pressure, may appear darker in color, the steam should come off easy enough and should be a green color. If it is a brown color it is overripe and if the steam doesn’t come off it is unripe. 
  • Cut avocado: Cut avocados turn brown fairly quickly. I would not recommend cutting them more than a few hours before you want to serve it. Even then, wrap each piece tightly with plastic wrap to help keep them looking fresh. You can also brush each piece with some lemon juice and store them in a container until serving. 

Crisp up the avocado: I saw a version of this dish that looks absolutely mouthwatering. Once you have cut and peeled the avocados, coat each section with seasoned bread crumbs. Lightly spray the avocados with cooking oil. Since these are avocados and avocado oil would be nice, but any cooking oil will do. Place the 4 halves into the air fryer and fry at 350°F for 6-7 minutes. Add the caprese filling and drizzle on the glaze. Enjoy! 

These don’t store very well so try to only make what will be eaten. However, if you do have leftovers, STORE the caprese filling in a container. Wrap the avocado(s) with plastic wrap. Store both in the fridge for 1-2 days.

  • 2 avocados
