I LOVE finding new and simple recipes that the entire family loves. Yes, it’s true, we get sick of the same old recipes each week and new ones that are easy and delicious are always welcomed! 😉
Today’s recipe just happens to be a new keeper recipe. I wanted to put a twist on Macaroni and Cheese by adding some chicken and making it a recipe you bake and it turned out fabulous (actually better than I could have imagined!) The combination of pasta, cheese, chicken and panko is delicious. The best part of all? The recipe is so simple making it another Quick and Easy dinner idea to add to the meal planner.

2 Boxes Horizon Organic Classic Mac Boxes (plus ingredients on back – 1/2 cup Horizon Organic milk, 4 TB Horizon Organic unsalted butter) – NOTE: I used Pasta Shells & White Cheddar Cheese
1 large chicken breast (cooked and chopped in small pieces) – optional
salt and pepper
1/2 cup sour cream
1/2 cup Horizon Organic cheddar cheese
1. Preheat oven to 400.
2. Begin by preparing macaroni as directed on back of the box, but doubling for the two boxes of Macaroni.
3. Once macaroni is made, add your chicken, salt/pepper, sour cream and cheddar cheese to your pot. Mix well.
4. Dish into a greased 9×13 pan.
5. Sprinkle with additional 1/2 cup cheddar cheese and sprinkle with Panko.
6. Bake at 400 for 10-12 minutes.
7. Broil for an additional 2-3 minutes to brown panko.
You really can’t go wrong with a hearty, cheesy dish. And using the Horizon Organic products means you are getting loads of protein and using organic ingredients.
Using Horizon Organic’s new crackers and some fruit, I turned this into an entire meal for the kiddos and they loved it all! Can’t beat that! 😀
