We love to have a store of popsicles in the freezer for summer, but making our own is on the summer bucket list! Cherry limeade popsicles are a must-make along with our fav Slurpee summer drink!

Easy summer popsicles

My name is Chelsea from Chelsea’s Messy Apron has a tasty recipe to share today! I want to share with you some delicious cherry-limeade popsicles! These popsicles are perfect for summer and especially for the hot days ahead of us in June. These popsicles are tangy and sweet – my favorite flavor combination!

The best part is there are only 4 ingredients so they are very simple to make. These popsicles have one bag of frozen cherries, one container of frozen limeade, some superfine sugar, and some sparkling lime water. All of the ingredients get blended together and then poured into a popsicle mold to be frozen. The mixture for these popsicles makes quite a lot of mix so you don’t have to use them all for popsicles.

You can use the remaining as a cool summer drink, although you will probably want to dilute it a bit with ice or water since it’s pretty strong to just drink. Once these popsicles are frozen, just run the mold under warm water for about 15 seconds and they are ready to be devoured. Enjoy everyone!

How to make popsicles

BLEND. Combine the Key Lime Sparkling Water with the frozen cherries, superfine sugar, and Limeade Frozen concentrate in a large blender.

Note. If you don’t have a large blender, you may have to do this drink in two separate blends or it most likely will spill out of the blender (I used my Wild Side Jar and Blendtec for this drink and it fit perfectly).

POUR + FREEZE. Blend together until smooth. Pour the mixture into popsicle molds. Make sure to not fill up the molds all of the way since they do expand upwards a little bit. Place in the freezer and allow to freeze overnight.

ENJOY! When ready to enjoy the popsicles, run the mold under warm water for 10-15 seconds, remove the popsicle and enjoy immediately.

Tips, Variations + Storing Info

To mix it up, add in fresh lime juice and/or lime zest instead of just frozen concentrate.

Find popsicle molds at Walmart, target, bed bath and beyond, or even online on amazon.

To make this fresher:

  • Make your own homemade limeade, rather than using store bought stuff. It doesn’t need to be frozen before combining it and putting it in the mold, so don’t worry about that
  • Use local raw honey to sweeten the popsicles, rather than processed sugar

Ingredients:

  • Make superfine sugar by running some regular white sugar in the food processor for a couple of seconds. This will break down the granule size and yield a finer texture. Superfine sugar melts quicker and incorporates into cold drinks/syrups better than normal sugar. If you do end up using regular sugar it can yield a grainy texture.
  • If you don’t want to use sparkling water the most important thing is that you use some sort of liquid to blend into it. This can be plain water, water with some added fresh lime juice etc. You can just do whatever sounds good to you.
