Simple, quick, and delicious Chicken Stir Fry. This tasty dinner is simple and is filled with broccoli, carrots, and snow peas!

Who here loves a good Stir Fry? You guys know we love our Asian recipes and Chicken Stir Fry has always been one of my favorites. It’s usually filled with all my favorite veggies and is so flavorful and addicting that I crave it all the time. I also think that it can be made quite healthily which is great if you are trying to watch your weight. I like to enjoy it over a bowl of warm, brown rice. The family prefers white rice or noodles, and those are great too!

For this particular stir fry, we added peppers, carrots, snow peas and broccoli. Other veggies like mushrooms and onions would be great additions as well. I’m particular fond of snow peas and peppers and feel like they added so much flavor to this recipe.

What vegetables are best in a Stir Fry?

Use about 4 cups chopped fresh vegetables

  • sweet peppers
  • zucchini
  • carrots
  • broccoli
  • yellow or white onions
  • green onions
  • pea pods
  • cabbage
  • spinach
  • asparagus
  • mushrooms

How to make Chicken Stir Fry

  1. Combine cornstarch, broth, soy sauce, salt, and ground dinger in a small bowl. Mix until smooth and set aside.
  2. In a large skillet, stir fry veggies in oil for 6-8 minutes. Add garlic and stir fry for a few more minutes.
  3. Add cornstarch mixture to skillet and bring to a boil. Cook for a few minutes.
  4. Add chicken and heat through. Serve with rice and ENJOY!

Stir fry recipes are usually simple and hearty, which is why I enjoyed this recipe so much. We are trying to better this year (as I’m sure many of you are too), so this has become a monthly staple at our house. The sauce is light and the veggies make it even more delicious! Ingredients

  • 2 tbsp cornstarch
  • 1 1/3 cups reduced-sodium chicken broth
  • 2 tsp soy sauce
  • 2 tsp garlic salt
  • 1/4 tsp ground ginger
  • 1/2 cup sliced green pepper
  • 1/2 cup carrots sliced
  • 1 cup snow peas
  • 2 cup broccoli
  • 1-2 tbsp vegetable oil
  • 2 tsp minced garlic
  • 2 cup cooked chicken breast cubed
  • 2 cup cooked brown rice

Instructions
