Chocolate Covered Strawberry Brownie Bites

Chocolate Covered Strawberry Brownie Bites are fudgy, rich, and delicious. They are topped with chocolate dipped strawberries!

The most delicious little brownies you’ll ever eat! Chocolate covered strawberry brownie bites are frosted with a cocoa cream cheese frosting and topped with a chocolate covered strawberry. I love rich, fudgy brownies, and the more chocolate I can pack in, the better. With my mild brownie addiction, I’ve come to really enjoy making mini brownie bites, which are perfect for get-togethers, pot-lucks, and back yard BBQ’s.

Baked in a mini muffin tin, and topped with a delicious frosting and a chocolate covered strawberry, these will definitely be a hit at your next potluck!

They have the wow-factor, but they’re super-easy to make! I typically start with a basic mix, and adapt it slightly to be baked into mini’s. From here, I mix up my super-delicious cocoa cream cheese frosting, which is probably my all-time favorite frosting. You really can’t beat a chocolate cream cheese frosting! Then, to top this chocolaty deliciousness, I add a chocolate dipped strawberry! Pretty and scrumptious!

Making strawberry brownie bites

Strawberries:

STRAWBERRIES. Rinse berries and pat dry with paper towels. On a baking sheet or flat surface, lay out a sheet of waxed paper.

CHOCOLATE. In a medium bowl, melt the chocolate chips at medium heat in microwave in 30 second increments. Stir, and repeat until chocolate is melted and smooth.

DIP. Dip ¾ of the berry into the chocolate, and lay gently on the waxed paper. Let chocolate set and harden at room temperature or in the refrigerator.

Brownies:

PREP. Preheat oven to 350 degrees.

BATTER. In a mixing bowl combine the brownie mix, oil, water and egg and stir until completely combined.

BAKE. Line a mini muffin tin with mini liners, and divide the batter into the cups. Using a cookie scoop is very useful for scooping the batter into the cups. Bake at 350 for 19-21 minutes. Let brownies cool.

Chocolate BUttercream Frosting

CREAM. With a hand or stand mixer, beat butter and cream cheese. Add the vanilla. Scrape down sides of bowl, and gradually add the sugar and cocoa powder, stopping to scrape down sides of bowl. Frosting will be thick.

DECORATE. Using a piping bag and tip, frost the brownies with a generous amount of frosting, and then top with a cooled chocolate covered strawberry. Enjoy!

Storing Info

The strawberries can be made 2 hours to 1 day ahead of time. It is best to make them at least 2 hours ahead of time to give the chocolate enough time to harden. Store them at room temperature.

The brownie bites (with or without frosting) can be made 1-3 days in advance. Just be sure to store them in an airtight container at room temperature or in the refrigerator.

STORE the chocolate covered strawberries in an airtight container at room temperature for up to 48 hours. These are best eaten within 1-2 days of being made. Because they do tend to develop condensation on them and appear to “sweat”, if you are making them for a special occasion I suggest not storing them in the refrigerator until after the event is over. 

Do not FREEZE chocolate covered strawberries. They do not freeze well because they become watery and mushy once they have thawed. 

The brownie bites are great for FREEZING. Once they have cooled completely, place them in a single row in a Ziploc bag and remove as much air as you can. Then seal it and store them in the freezer for up to 3 months. I suggest frosting them after they have thawed.

Ingredients

  • 1 box brownie mix (18.2 oz box)
  • 1/3 cup vegetable oil
  • 1/4 cup water
  • 1 egg

Frosting

  • 4 oz cream cheese room temperature
  • 1/4 cup butter room temperature
  • 1 tsp vanilla
  • 1/4 cup unsweetened cocoa powder
  • 2 cups powdered sugar

  • 24 medium strawberries with stem
  • 1 cup semi-sweet chocolate chips melted
