The most delicious little brownies you’ll ever eat! Rich, fudgy mini brownies are frosted with a cocoa cream cheese frosting and topped with a chocolate covered strawberry. A chocolate-lovers dream!

Yep, I’ve got my hand high in the air as well!
I love rich, fudgy brownies, and the more chocolate I can pack in, the better. With my mild brownie addiction, I’ve come to really enjoy making mini brownie bites, which are perfect for get-togethers, pot-lucks, and back yard BBQ’s. Baked in a mini muffin tin, and topped with a delicious frosting and a chocolate covered strawberry, these Chocolate Covered Strawberry Brownie Bites will be a hit at your next potluck!
These brownies definitely have the wow-factor, but they’re super-easy to make! I typically start with a basic brownie mix, and adapt it slightly to be baked into mini’s. From here, I mix up my super-delicious cocoa cream cheese frosting, which is probably my all-time favorite frosting. You really can’t beat a chocolate cream cheese frosting! Then, to top this chocolaty deliciousness, I add a chocolate dipped strawberry! Pretty and scrumptious!
With strawberries being in peak season right now, its the perfect time to make a batch of these delicious treats. If you’ve never done it, making chocolate dipped strawberries is a pretty simple process. It’s simply a matter of melting chocolate chips until smooth, dipping the strawberries, and letting harden on waxed paper. I let these cool and set-up in the fridge, to speed up the process a bit, but after a short time at room temperature, the chocolate will harden on its own.
Here’s the recipe and easy directions for these delicious Chocolate Covered Strawberry Brownie Bites:
Chocolate Covered Strawberry Brownie Bites Recipe
- 1 box brownie mix (18.2 oz box)
- 1/3 cup vegetable oil
- 1/4 cup water
- 1 egg
- 4 oz cream cheese room temperature
- 1/4 cup butter room temperature
- 1 tsp vanilla
- 1/4 cup unsweetened cocoa powder
- 2 cups powdered sugar
Chocolate Dipped Strawberries
- 24 medium strawberries with stem
- 1 cup semi-sweet chocolate chips melted
Rinse berries and pat dry with paper towels. On a baking sheet or flat surface, lay out a sheet of waxed paper. In a medium bowl, melt the chocolate chips at medium heat in microwave in 30 second increments. Stir, and repeat until chocolate is melted and smooth. Dip ¾ of the berry into the chocolate, and lay gently on the waxed paper. Let chocolate set and harden at room temperature or in the refrigerator.
- Preheat oven to 350 degrees. In a mixing bowl combine the brownie mix, oil, water and egg and stir until completely combined. Line a mini muffin tin with mini liners, and divide the batter into the cups. Using a cookie scoop is very useful for scooping the batter into the cups. Bake at 350 for 19-21 minutes. Let brownies cool.
With a hand or stand mixer, beat butter and cream cheese. Add the vanilla. Scrape down sides of bowl, and gradually add the sugar and cocoa powder, stopping to scrape down sides of bowl. Frosting will be thick.
Using a piping bag and tip, frost the brownies with a generous amount of frosting, and then top with a cooled chocolate covered strawberry. Enjoy!
