Taco Casserole + Doritos

This recipe combines two of my favorite things – Dorito chips and Taco Casserole flavors. YUM!

Casseroles are one of my favorite things to make for dinner. They are so simple and always delicious, AND the whole fam loves them.

They also travel well and feed a bunch of people so they are perfect for bringing over to a friend’s house or cooking for a crowd.

This dorito casserole is like a cheesy taco salad casserole! I love all of the Mexican flavors mixed in with the crunchy Dorito chips. Each layer has a different flavor which all combine for one incredible bite!

Lots of Layers!

This dorito casserole recipe comes together in no time! It’s like a tasty Mexican lasagna.

PREP. Preheat the oven to 350°F.

BEEF. In a skillet, cook the ground beef until brown. Drain and add taco seasoning, sour cream, and the enchilada sauce. (Try our homemade Green Enchilada Sauce).

LAYER. Grease a 9×13 casserole dish. Layer ⅓ of Doritos over the bottom of the dish (crush them only slightly). Next, add ½ of the ground beef mixture, then ⅓ of the cheese.

Add another layer with ⅓ Doritos, slightly crushed, the rest of the ground beef, and ⅓ of the cheese.

BAKE. Add the reaming chips and cheese over the top. Cover with foil (tent it so that the melting cheese will not stick to the foil.) Bake for 30 min.

Remove the foil and bake for another 5-10 minutes, until the cheese is melted.

ENJOY! Let the casserole rest for about 5 minutes. Garnish it with diced tomatoes, avocados, green onion, and cilantro. Add any other favorite taco toppings like Guacamole or Salsa.

Recipe Tips

The variations for this tasty Mexican casserole with doritos are endless! Make it spicier, or add in your favorite flavors. No matter what you do, it’s sure to be a hit!

Taco seasoning. Easily adjust the flavor by making homemade Taco Seasoning. For a spicier seasoning, increase the amount of red pepper flakes and chili powder. If you like more cumin or garlic increase those amounts. Play around until you get your own signature blend.

Variations. Feel free to change up some of the ingredients in this dorito taco bake.

  • Meat. Use ground turkey or ground chicken instead of ground beef.
  • Sauce. Use Red Enchilada Sauce instead of green.
  • Chips. You can even use regular Tortilla Chips instead of Doritos.
  • Veggies. Add in any other veggies like corn, bell peppers, or jalapeno peppers would be great.
  • Cheese. Substitute the cheese for cheddar cheese, pepper jack cheese, or a Mexican cheese blend.

Serving suggestions. You definitely need to serve this taco casserole with doritos with your favorite tortilla chips! You could also serve it with warm Homemade Tortillas on the side. Or even some Cilantro Lime Rice or Spanish Rice would be delicious.

We hope you love this flavor recipe as much as we do! We couldn’t believe how delicious this combination of ingredients would be, but we’re glad we tried it. Some great sides to serve it with include Mexican Street Corn, Mexican Cornbread, and Southwest Salad.

Storing Info

Make ahead of time. Dorito casserole with ground beef is perfect for prepping ahead of time! Prepare everything up until the baking part. Keep it covered in the fridge and cook the next day when you need it.

FREEZE. You can also prepare this in a freezer-safe container. Keep it airtight in the freezer for up to 2 months and cook it when you’re ready to eat it for dinner. Note that the chips will become much softer after being frozen.

To reheat. We recommend letting the casserole thaw in the fridge overnight before baking it. We also typically leave the top layer of cheese and chips off before freezing it. After it has thawed, add the freshly shredded cheese and Doritos before baking so it’s crisp and cheesy. Cold cheese often bakes instead of melts.

What flavor of Doritos should I use for a taco dorito casserole?

There are over 100 different types of Dorito chips. I used the classic Nacho Cheese Doritos, but you can use other favorites like Spicy Nacho, Salsa Verde, Flamin Hot Nacho, or even Cool Ranch. You can also use regular tortilla chips in place of the Doritos.

Is dorito casserole a good freezer meal?

You can absolutely freeze this casserole to bake later. I do recommend you leave the top layer of cheese and chips off before freezing it. Wrap tightly with plastic and foil and freeze for up to 3 months. Thaw before adding the top layer of chips and cheese, and then bake.

Ingredients 

  • 1 lb ground beef lean
  • 1 package taco seasoning
  • 1 cup sour cream
  • 16 oz green enchilada sauce
  • 6-7 cups Nacho Cheese Doritos divided
  • 4-5 cups Monterey Jack cheese divided
  • cilantro, avocados, tomatoes optional

    Great dish! I was working with leftovers from taco night, so I was able to skip a step and speed things up. I had the last of a bag of Doritos that were broken, and nobody wanted to eat, so this was a perfect way to use those bits up. I tossed in some corn with poblano and red peppers that was also leftover. I had shredded cheddar on hand and used a little american cheese too and it all worked out. I really enjoyed the flavor on this easy little dish and I will definitely be making this again. The flavor on this was tamale pie-esque. I will probably add ripe black olives in it next time. I can’t believe how simple this delicious meal was to put together and it used up several leftover bits and made a filling meal. Thank you for sharing! I’m doing a happy dance because I have another portion left for my meal tomorrow.

    Super good! I even used off brand Doritos (THE HORROR) and it was still yummy. Honestly, if you take out the doritos, this would make a super tasty dip.
    I used some tortillas to eat with it, but by itself, was awesome.

    It was great. Love the green sauce/sour cream combo with the meat. Lots of cheese! Doritos!
    Personally think it needs more meat though. Next time I’ll probably do 1.5 the meat mixture

    We love Dorito casseroles. So excited to try this one, never thought of putting green chile enchilada sauce! Gonna add a can of fire roasted diced tomatoes to the meat mix!

    Great and dont SKIMp on toppings. I prefer mild taco seasonings and mild enchilada sauce they are out there if you have kids or not as fond of heat. I also used a can of refried beans layered those in as well, with an extra splash of chicken broth in my meat and sauce mixture. I also used cool ranch flavor doritos, no reason just what i had and the taste was awesome. Love your recepies.
