Easter Scotcharoo Cups on { lilluna.com } YUMMY!! A peanut butter, chocolatey, butterscotch rice krispy with a Cadbury Caramel Egg.

We  love Scotcharoos at our house! It’s a quick dessert that the entire family loves. It’s always one of those “go-to” recipes when I need a quick treat for a friend and family function. Well, after seeing all of the cute Easter Cup goodies that have been around for years re-circulating on Pinterest, I decided it was about time someone made one using the Scotcharoo recipe. And with Easter right around the corner I knew it needed one easter touch – a Cadbury Caramel Egg (YUM!!)

Now, you don’t have to use these caramel eggs – it can be any treat (and not even Easter related) but other goodies I think would be good include the small Easter Reeses Eggs, M&Ms, Hershey’s Kisses (or hugs) and more. I’m just a sucker for Cadbury, and knew these Caramel Eggs would be the perfect touch to this already perfect dessert. 🙂

These were literally gone in minutes when I brought them to my mom’s house this week. If you love Butterscotch, Chocolate, Caramel and more you will definitely be a fan of these Easter Scotcharoo Cups. 🙂

Easter Scotcharoo Cups

Ingredients

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup light corn syrup
  • 6 cups Rice Krispies
  • 1 cup milk chocolate chips
  • 1 cyp butterscotch chips
  • Cadbury Caramel Eggs

Instructions

  1. Spray your muffin pans well to make sure cups don't stick in them. Set aside.

  2. Bring peanut butter, sugar and corn syrup to a boil in a pot over medium heat.
  3. Place rice krispies in a bowl. Pour PB, sugar and corn syrup mixture over cereal and mix well. Press into muffin pan. Use the back end of a spoon to press down in the middle of your cup to make a little indent.
  4. Melt chocolate and butterscotch chips in a pot over low heat until all melted. Spoon into the indent of each cup or pipe into each cup. Let cool for a few minutes and add your Cadbury Caramel eggs (adding the eggs right away may make them melt).
  5. Let cool or refigerate for a bit. ENJOY!

{I made two different sizes – regular Muffin pan size and mini Muffin pan size. One batch was able to make 12 regular and 12 mini cups.}

NOTE: Be sure to spray your pans well, so the cups come right out. 🙂

I was really quite sad that I only came home with 2 of these beauties. But, what was even more sad was when I saw that the hubby had eaten one and a half of them and left only half sitting in the pan the next morning. I guess it’s better than nothing, but I was still hoping for just a little more the next day, lol!
