Gooey Hot Cocoa Cookies + Cookie Exchange Kit Giveaway

We LOVE cookies at the Merkley house.

I’m not exaggerating when I say we make them at least once a week. They’re usually quick, easy and the kids can help out making them.

This next recipe was one we made a few weeks back after we spotted a new Cupcake Mix by Betty Crocker: Hot Cocoa Cupcake Mix.



Of course I had to buy them and try them out. You guys know how much I love my Gooey Butter Cookies recipe, so I just changed things up a bit and made them using this new mix. 😉

Here is how these Gooey Hot Cocoa Cookies turned out…

Delicious Gooey Hot Cocoa Cookies

They were SOOO yummy! We took some to friends and they totally agreed. 

Yay for finding a new version of a recipe that everyone loves! 😉

Here is what you’ll need to make these Hot Cocoa Cookies too:

Gooey Hot Cocoa Cookies
  • 1 Hot Cocoa Cupcake Box Mix (frosting included in box)
  • ½ cup butter
  • ½ tsp. vanilla
  • 1 8 oz. Cream Cheese bar
  • 1 egg
  • powdered sugar
  1. Beat butter, vanilla, egg and cream cheese until fluffy.
  2. Mix in cupcake mix.
  3. Chill for 30 minutes.
  4. Roll into balls and dip in a bowl of powdered sugar.
  5. Bake at 350 for 10-12 minutes, and sift powdered sugar on top if desired.
  6. Make Frosting according to box directions.
  7. Top with Peppermint Pieces or Mini Marshmallows.

My kids have been super obsessed with putting these Peppermint Crunch Pieces on top of everything so we did that for half of them and then put mini marshmallows on the others. They were both hits with the kiddos!!

My kids sure do love making cookies, and I love that it’s something we can do together.

Recently, we were able to make cookies and host a Cookie Exchange the week before Thanksgiving. The Cookie Exchange was to benefit Toys for Tots. You see, Betty Crocker and Toys for Tots joined forces to host cookie exchanges to collect more toys than ever for deserving children nationwide. I invited a few friends over and asked them all to bring a toy to donate. This is what we were able to collect:

It was SO easy to do. I invited a few friends over for a play date and cookie exchange. Everyone came with their kiddos and with cookies and a toy. Then we all ate cookies, chatted and let the kiddos run around for a few hours. It was super fun and we were helping with a great cause at the same time. I LOVED it!!

Oh by far the pumpkin chocolate chip cookie made from a box of spice cake mix and can of pumpkin. I think holding a party would help in several ways, one I could meet my neighbors, two my DGD would meet new friends, and the best of all getting toys for a great cause. There are so many holiday cookies to pick from but… I have to say my favorite is one I actually haven’t made myself, or rather by myself! My dad owns a Hungarian bakery and there have been many Christmases I’ve helped him make kolache cookies. No one can replicate his recipe. The raspberry have been my favorite since childhood 🙂
