our favorite mini Muffins

Today, I’m sharing a recipe for Mini Applesauce Muffins that were beyond delicious.

The taste of applesauce is subtle, but it made the muffins super moist and yummy. They’re also topped with cinnamon and sugar making them extra irresistible! They were really easy to make and I think everyone in your family will like them.

We like to make these mini muffins to enjoy for breakfast, or even as a snack – especially after school. The kids find themselves wanting them every week.

How to Make mini Applesauce Muffins

PREP. Preheat the oven and lightly spray the mini muffin pan with cooking spray and set aside.

BATTER. Cream the butter and sugar until they are well combined. Fold in the egg and applesauce. Combine the remaining dry ingredients in a separate bowl and mix. Add the dry ingredients to the wet ingredients and mix well to create a batter.

BAKE. Spoon the batter into the greased mini muffin pan, filling each about 2/3 full. Bake for 11-13 minutes.

TOPPING. Meanwhile, combine sugar and cinnamon in a small bowl. Melt the butter in another bowl. Let the muffins cool for a bit. Once they’ve cooled, dip the muffins into melted butter and then into the cinnamon and sugar mixture. ENJOY!

Recipe FAQ

Can margarine be used instead of butter in baking? Technically yes it can, but I would recommend not switching them. Butter is cream based where as margarine is oil based and flavored to taste like butter. When butter is substituted with margarine the end result isn’t quite the same.

What kind of applesauce is recommended? We used sweetened plain applesauce for this recipe. You can also use unsweetened applesauce or cinnamon applesauce. They won’t really alter the flavor much or at all. If you are worried, you can add add an extra pinch of sugar if you used unsweetened applesauce. If you used cinnamon applesauce you can just reduce the amount of added cinnamon.

You can also used homemade applesauce!

Can I make these into regular sized muffins? Yes just adjust the bake time to 22-25 minutes or until a toothpick comes out clean.

How to store muffins

Room temperature: Store the cooled muffins in an airtight container for up to a week. Lay a paper towel on the bottom of the container add the muffins and lay a second paper towel over the top. The paper towel will absorb any evaporated moisture so the muffins don’t get a soggy texture. The airtight container keeps the air from getting in and drying them out too much.

To freeze: Allow the muffins to cool, arrange them in a single layer on a baking sheet and freeze for 2-3 hours. Once frozen transfer them to a ziplock bag and freeze for up to 3 months.
