Peanut Butter Cornflake Cookies

We LOVE treats!! And we especially love finding new treats that become family favorites. Today’s recipe was found by one of my sisters. You might know them as “Grandma’s Peanut Butter Cornflake Cookies”.

These a bit like a crunchy scotcharoo cookie loaded with peanut butter and hints of milk chocolate and butterscotch. YUM, right?The best part of all is that these Peanut Butter Chews require NO baking. This is really nice if you’re busy doing lots of baking (holidays, anyone??) because it frees up oven space. Also, these only take 15 minutes tops from start to finish, so you can have fresh cookies in a jiffy!

I’m not going to lie, we always have Chex, Rice Krispies and Corn Flakes on hand just so we can make these kinds of yummy treats whenever we want. 😀 I’m a huge fan of cereal treats, and think this one will be a new favorite!

How to make Peanut Butter Chews

These Peanut Butter Corn Flake Cookies are ready in 15 minutes, and they only take FIVE ingredients!!

  • Corn syrup
  • White sugar
  • Peanut butter
  • Chex
  • Corn flakes

BOIL. All you have to do is combine the corn syrup and white sugar in a large saucepan and bring to a boil over medium heat. Boil for one minute, and then remove from heat.

BLEND. Stir in the peanut butter until evenly blended then add both cereals and mix well.

DROP. Using a cookie scoop or a spoon, drop the cereal mixture onto waxed paper.

DRIZZLE. If you want to add the drizzle on top, melt chocolate chips and butterscotch chips in a small pot over low heat, stirring frequently until smooth. Drizzle over the top and let set for about 20-30 minutes.

Tips + Storing Info

Storing the cookies in the fridge makes them more chewy.

Using a cookie scoop will help give even uniform chews

Do not let the sugar mixture to boil too hot or it will burn. 

Avoid using wax paper to layer the cookies as it tend to stick leaving bits of paper stuck to the chews.

Add different mix ins that change things up:  

  • Top with crumbled bacon, crushed peanuts, or mini chocolate chips
  • Use different cereals like Rice Krispies or even frosted corn flakes
  • Mix in mini marshmallows with the cereal before coating them in the peanut butter mixture.
  • Add nutella or melted chocolate to the peanut butter sauce; about ¼ cup 

These peanut butter chews store really well. STORE in an airtight container, separating the layers with parchment paper. Store on the counter for about a week. In the fridge for up to 3 weeks, or in the freezer for 1-2 months. Thaw before serving.

Ingredients 

  • 1 cup corn syrup

  • 1 cup creamy peanut butter
  • 2 1/2 cups rice chex cereal
  • 2 cups corn flakes cereal
  • 1 cup milk chocolate chips
  • 1 cup butterscotch chips
