I don’t think there is a better dessert to celebrate the arrival of autumn. I am usually firmly in the all things apple camp. Yes, I may have a pumpkin spice latte or two, but until i tried this cake I was never much for the pumpkin craze. Apples treats like these doughnuts of this apple sheet cake are much more my speed.

But the apple sheet cake I made was covered in the most amazing brown butter salted caramel frosting. I could eat the frosting all by itself. No cake needed, but then that wouldn’t be appropriate would it?

I don’t usually make the same dessert twice, especially not twice so close together. But I was craving that frosting. One taste and I know you will be too. Pumpkin and caramel is a delicious combination, and brown butter pretty much tastes great on anything, so I made a pumpkin sheet cake to accompany my brown butter frosting.

You want to know something? I liked this pumpkin sheet cake better than the apple cake. And I LOVED the apple cake.

Pumpkin Sheet Cake - If you are only going to make one cake this fall, make it this pumpkin sheet cake with delicious brown butter salted caramel frosting!!

Here is the recipe…

INGREDIENTS:

1 – 15 ounce can of pumpkin puree (not pumpkin pie filling)
2 cups sugar
1 cup (2 sticks) butter, melted
2 eggs
1/2 cup milk
1 tsp vanilla
2 cups flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
for the frosting –
1 cup (2 sticks) brown butter, hardened
8 ounces cream cheese
2 cups powdered sugar
1/2 cup salted caramel sauce

DIRECTIONS:

  1. Preheat the oven to 350 degrees.
  2. Lightly grease a sheet pan (11 x 15, or 12 x 16) or a 9 x 13 baking pan
  3. Beat together the pumpkin sugar, butter, eggs, milk, and vanilla
  4. Whisk together the flour, baking soda, cinnamon, salt, and nutmeg
  5. Gradually add the dry ingredients to the wet, and mix until smooth
  6. Pour into the prepared pan
  7. Bake cake 25 minutes for the sheet pan, and an additional 15 or 20 if using the smaller 13 x 9 pan )
  8. Allow cake to cool completely before frosting
  9. To make the frosting – in a small saucepan melt the butter, swirl the pan to keep the butter cooking evenly. The butter will begin to foam, and as the foam subsides, it will turn from yellow to golden brown. As soon as it changes color, remove form the heat. Place butter in a heat proof container, cover, and refrigerate until hard. (I made this the night before I planned to use it)
  10. Cream together the chilled brown butter and cream cheese
  11. Gradually add the salted caramel sauce, and then blend in the powdered sugar
  12. Frost your cooled cake, slice, and serve. ENJOY!

 Sheet cake is one of my all time favorite desserts, and you already know how much I love pumpkin. Not to mention that brown butter on frosting on top…  This looks TO DIE FOR.

Happy Easter 2017! I made the Easter Bark and too my surprise, something that literally takes several minutes is really good – very rich! I used Red Velvet Oreos instead of regular Oreos for a little different taste and coloring. I thought it came out great! Thanks for the recipe!!!
