It’s one of our easy go-to breakfast casserole (like our biscuit egg casserole and hashbrown breakfast casserole). This sausage filled breakfast recipe is great for holidays and weekends!

From muffins to pancakes to French Toast to eggs – we love it all! And one of our favorites are breakfast casseroles. Today’s recipe includes a few of our favorite ingredients, including sausage, eggs and crescent rolls.
We saw the recipe on Hello Happiness, and decided to give it a try. The casserole really was simple to put together and was ready in a short 20 minutes.
How to Make Sausage Egg Breakfast Casserole
If you like sausage, you’ll love this recipe, but if you prefer bacon you can use that instead or include both – which is what we like to do. Here are the ingredients needed for this casserole:
- sausage
- crescent sheet or crescent rolls
- cheese
- eggs
- milk
- Italian seasoning
- salt & pepper
Start the casserole by preparing your sausage. While the sausage is browning, unroll the crescent sheet and spread onto the bottom of a greased 9×13 pan. Spread the sausage over the dough and sprinkle the cheese on top.
Whisk together eggs, milk and seasoning in a bowl and pour over the top of your casserole. Bake at 400 degrees for 15-20 minutes. When the eggs are set and the crust is golden, the casserole is ready.

Can you make this sausage casserole ahead of time? Yes, you can! You can make this up to 24 hours before cook time. Just cover and place in fridge until ready to cook.
Which cheese works best for this dish? We like cheddar, but most combos work for this. You can even use a Mexican or Monterrey Jack cheese and add chopped peppers to give it a more Mexican-style taste.
How to store breakfast casserole with crescent rolls? Once cooked, cover and keep in fridge for 4-5 days. Reheat in the microwave.
Can you use pre-cooked sausage for this recipe? Yes, you can. It makes it even more simple and quick. You can also change up the sausage if you like a more mild or spicy version.
Can you use crescent rolls instead of a crescent sheet? Of course. Just be sure to pinch the seams together when placing in the bottom of your pan.

Ingredients
- 1 lb sausage
- 1 package crescent sheet
- 1 cup shredded cheddar cheese
- 5 eggs
- 1/4 cup milk
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat oven to 400.
- Brown sausage in a skillet over medium heat, breaking it up as it cooks. Unroll crescent sheet and spread onto the bottom of a greased 9×13 pan. Evenly spread sausage over the dough.
- In a bowl, whisk eggs, milk, Italian seasoning, salt, and pepper. Pour over the top of your casserole, and sprinkle the cheese on top.
- Bake at 400 degrees for 15-20 minutes until eggs are set and crust is golden.
Can you add hashbrowns to it

What size crescent rolls work best?

Simply Marvelous I added sauteed onions and bell peppers and another egg. I baked croissant first for 5 minutes before topping. When done I topped with finely chopped cilantro family didn’t leave any I had 1 bite. And it was good!! Thanks I will be making again

Can I use biscuits instead of crescent rolls
I haven’t used biscuits, but you could certainly give it a try! Baking time may be slightly different since the biscuits would be much thicker. You’ll have to let us know how it turns out if you use the biscuits. 🙂
Delicious! I made a couple adjustments. I added sauteed spinach, onion, mushroom and garlic to make it more hearty as a dinner entree. I also used sausage crumbles from the bag since i had That on hand. Will definitely make again! Thank you!

This thing is amazing! I usually dice up a small onion and sautee it with the sausage. I also use 9 eggs – which I know is a far cry from the 5 listed in the ingredients – It’s just what my husband and I like best. So I double the milk and add extra seasoning. We make it on a Sunday and then heat up pieces for breakfast through the week. THANK YOU SO MUCH FOR CREATING THIS!

Mine CAME out “juicy” (too Runny) as well. I wrapped it up in aluminum foil and placed it back in oven For 5minutes. That did the trick.

Am i suPposed to let it sit before i cut into it? If so, For How long?
I mean you don’t have to, but I usually let it sit for at least 5-10 min, to cool.
So delish and amazingly simple. I made this for my daughter, her husband and two growing boys. I didn’t think the recipe called for enough eggs so I increased the quantity to eight instead of five. It turned out perfectly. And, ITALian seasoning for breakfast? No. I omitted it. I Plan to make it again this weekend for overnight guests. Thank you for publishing this!!

Can I fix this breakfast casserole and freeze on December 12th then bake it on the 20th?? I’m trying to bake things before my kids come home on December 19th….
I personally have not tried freeing this. You can make ahead & stick in the fridge covered, then bake. That could work for freezing, but I have not tried.
Such a great, simple recipe! I Used eight eggs instead of five, and cooked for 20 minutes. Even my picky child loves it, and he does like anything! Perfect for families on a budget.

Love this , I use either plain light bread or Texas toast and have never ever had a piece left and I always have to make two casserole dishes at the same time , think I will be trying the crescents next time . I had never thought about that . Well time to go make some happy belly’s!!

This is so simple to throw together. My 84 yo Dad usually goes out to breakfast every day. With cases rising after Thanksgiving, he is staying at home. I made this and he is raving about it. One pan put into individual containers feeds him for a week with some leftovers for the freezer. I can’t stress how easy this is to make. We add tons of veggies to it as well.

Could I sub biscuits for crescent rolls? Its what I have on hand. I think it would turn out ok!
Yes – I think it would work. Just make sure the biscuit dough isn’t too thick. You can stretch it out to be a little thinner like the crescent roll dough if you need to.

I literally just made this recipe and it took about 18 minutes to be completely cooked. And the nice thing is you don’t have to wait till it cools, it cuts perfectly.
You did something wrong then. I just pulled mine 4th one this month from the oven after 17 minutes and as always it’s perfect and delicious! Don’t blame her for it not cooking in your oven properly. Great recipe. Christmas breakfast this year!
We love this recipe!! When making ahead of time, do you still pour the egg mixture on top? Even if it’s not going to be cooked til the next day?
Yes, you can! You can make the recipe up to 24 hours beforehand and you can pour the egg mixture on already. You can also wait until right before baking too. Either way!
I typically use a different recipe but was intrigued by yours with the use of the cresent sheet, so I combined them. I just realized that in your recipe it calls for 5 eggs, my normal one, 8 eggs. Should I remove some of the egg mixture? Wondering if it’ll still cook up nicely with the crescent sheet with that much egg.
I haven’t ever tried the recipe with 8 eggs. You maybe would need to play with the baking time? You’ll have to let us know what you did and how it turned out. 🙂

Oh darn! You could try using a pie crust or even using refrigerated biscuits. Both would give you a little different flavor and texture, but may still work? If you use biscuits, I’d say flatten them out either with your hands or a rolling pin so they aren’t so thick. Best of luck in the hunt for crescent rolls!
I haven’t made this yet, but I wondered if you or anyone on here has ever tried adding some gravy to this casserole and if so, did it come out ok? I used to get these little frozen individual breakfast pizza’s that had gravy, sausage, cheese, and egg that were so good, but I can’t ever find them anymore, so I’ve been on the hunt for a recipe that might be similar.. the gravy really made the whole dish so good.. any ideas would be great! I added peppers and onions to the sausage when I cooked it. I also used half of low fat cheddar cheese and half of regular cheddar. I also used half and half milk instead of regular skim milk.

This was SO easy and delicious! We have a standard breakfast casserole we have made for years which includes toast broken up into small pieces but this one is so much less time consuming and according to my hubby, even better! Because of the size of our family, I included 8 eggs and it was done in 22 minutes.
This was a very easy casserole to make and I winged it and put onions and peppers In It to give it flavor
