Yummy Scarecrow Treats! Gooey marshmallows, candy corn, peanuts, and a cake batter base!!

Are you guys ready for some more Halloween treats?

I’m sure you can tell I’ve been on a little kick. It just seems like we’ve had so many events already in the last few weeks gearing up for Halloween so I try to use the opportunity to try out new desserts, and recently they’ve been Halloween treats. ๐Ÿ™‚

If you love peanuts and candy corn then I promise you will love this next treat!!!

It kind of reminded me of Pay Day bars but with a little marshmallows – super yummy!

Ingredients

  • 1 box Yellow Cake Mix
  • 1 egg
  • 1/2 cup butter softened
  • 3 cups mini marshmallows
  • 1/2 cup light corn syrup
  • 1/3 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup peanut butter
  • 2 tsp vanilla
  • 2 cups rice krispies cereal
  • 1 1/2 cups peanuts
  • 1 cup candy corn

Instructions

  1. Preheat oven to 350. Mix cake mix and butter until well mixed. Add egg and beat until all mixed together.

  2. Press dough mixture in to the base of a greased 9x13 pan. Bake for 12-14 minutes until edges are light brown or until set.
  3. Add marshmallows to the top and return to oven for 1-2 minutes until marshmallows puff up. Remove from oven.
  4. Combine corn syrup and sugars in a pot on medium heat. Stir for a few minutes until mixture comes to a boil. Remove from heat. Stir in peanut butter and vanilla until smooth. Add cereal, peanuts and candy corn. Mix well. Pour over marshmallow mixture.
  5. Let cool and cut into bars for serving. ENJOY!

I’m directionally challenged and didn’t realize not to mix the cake mix regularly and then add butter and an egg. Whoops. Not too happy with myself right now.

Did you use honey roasted peanuts or regular salted peanuts? I ask because we often make a trail mix that is based around honey roasted peanuts and candy corn and tastes like a Payday, so I wasn’t sure if normal peanuts would still give it this taste? Or am I completely wrong and would it make this rich recipe even richer?

    I used regular peanuts, but I think honey roasted would be just as good!! ๐Ÿ˜€

I made these for a Halloween party this past weekend. I used more marshmallows then it called for. So mine turned out a lot messier then your picture. There was a lot of marshmallow peaking out. I was told by people that they preferred that. They were a huge hit. I would suggest cutting the pieces smaller bc they are so rich. I’m planning on changing it up and making them for Christmas too!

These are super easy and delicious! I waited till they were completely cool to cut them and I think it would have been a little easier when they were cool but not completely set. Just a thought! I took them to work and they were gone in an hour! Great recipe!
