Juicy and sweet strawberry ghosts are spooky and delicious!! Here is a simple and quick tutorial on how to make these Boo-tiful treats.

Ghoulish Treats

Chocolate covered strawberries are one of my favorite treats. They are fresh, sweet, and have the perfect amount of chocolate. So if I can incorporate them into a celebration you’d better believe I’ll do it!

We eat so many fun and festive treats during for Halloween that it’s nice to throw something a little less sweet into the mix. These strawberry ghosts are always a big hit with the kids!

The kids love to get their hands dirty and help make them…and then lick clean. 😉 These are sure to be devoured quickly by kids and adults a like. They make a great addition to any Halloween spread!

Start with Perfect Strawberries

Many fruits like bananas continue to ripen after being picked. Did you know that once a strawberry is picked it will not continue to ripen? That’s why it is important that you choose berries that are perfectly ripe for this treat.

  • Red from stem to tip, or very little white around the stem.
  • The berries will have a fresh aroma. No aroma means they are not ripe and a “tangy” aroma means they may be too ripe and starting to go bad.
  • Avoid bruised, wrinkled or a reddish.brown berries as those are indicators that they are too old.

Dipping Strawberries

WASH. Begin by rinsing your strawberries. Place them on a paper towel to dry. Be sure that you wash and completely dry the berries before dipping them. This will not only help the chocolate stick to the berry, but it will help the treat last longer. 

PREP. Line a baking sheet or pan with parchment paper*. Place Strawberries right next to your pan. Also, place a hot pad next to the pan for when the chocolate is melted.

*Tip: Sometimes the parchment paper doesn’t stay very well and starts to roll back up. To stop this I will spray a little cooking spray on the pan and then put on the parchment paper.

CANDY MELTS. Melt your white Candy Coating. This can be the tricky part, but the trick is to do only a few cubes at a time by placing in a small pot on LOW heat, stirring CONSTANTLY with a rubber spatula. Yes, it may take at least 5 minutes and your hand gets tired, but your candy will melt perfectly. When candy coating is completely smooth, remove from heat.

DIP. Hold your pot of chocolate at an angle. Grab strawberries by the stem and dip both sides in the chocolate and when placing down on the parchment paper, drag and drop the strawberries so it makes a ghost tail. Continue doing this for all strawberries.

COOL. Let Strawberries set on your counter until hard. Melt milk chocolate and place in a Ziploc bag with a small cut in the corner. Pipe on eyes and mouth and let set. Place in fridge to set more quickly.

Tips + Storage Info

Another great way to melt and keep your chocolate warm without burning long enough to dip all the strawberries is to use a double boiler. If you don’t have one you can make your own: 

  • Add 2 inches of water to a small pot
  • Find a heat proof metal or glass bowl that is slightly larger than the pot so that the sides of the pot will hold the bottom of the bowl out of the water.
  • Add candy melts to the bowl and bring the water to a boil.
  •  Reduce heat and stir the chocolate until melted and smooth

STORE the ghost berries in an airtight container separating layers with wax paper. They can sit at room temperature if served the same day. Otherwise store them in the fridge for 2-3 days. 

Condensation: When storing chocolate covered strawberries you may have noticed that beads of condensation sometimes form on the chocolate. One way that you can reduce this effect is by…

  1. placing a paper towel at the bottom of the storage container.
  2. Sprinkle baking soda on the paper towel and then add another paper towel on top of the baking soda.
  3. Finally, you can put in the covered strawberries. The baking soda will absorb any moisture and keep condensation from beading on the berries.

Ingredients 

  • 1 pint strawberries rinsed and dried
  • 8 oz melting chocolate white
  • 1 oz melting chocolate chocolate (for face)
  • parchment paper
