These chewy and fudgy brownie cookies combine the best of desserts worlds making one delicious "brookie" filled with loads of chocolate chips AND flavor!
Heat oven to 350 F.
Melt butter and 1 cup chocolate chips in a saucepan over low heat, stirring occasionally. Remove from heat.
Stir in brown sugar. Let cool slightly, stirring occasionally. Mix in eggs and vanilla. Then flour, cocoa and salt. Add in remaining chocolate chips. Mix until combined. Let batter rest for 30 minutes.
Drop tablespoonfuls on a greased cookie sheet. Bake at 350 for 10 minutes or until set. Cool 5 minutes before removing from cookie sheets to cool completely. Enjoy!
