Penne Tomato Mozzarella Pasta Recipe

Ingredients

  • 12 oz penne pasta
  • 1/4 cup olive oil
  • Italian dressing
  • 1 handful green onions chopped
  • 1 clove minced garlic minced
  • 1 cup cherry tomatoes quartered
  • salt and pepper to taste
  • 5 oz mozzarella cheese diced
  • 3/4 cup Parmesan cheese grated
  • 20 large black olives halved
  • basil chopped

Instructions

  • Cook pasta according to package directions. Drain, and set aside.
  • Add green onions to a skillet with hot oil. Cook 2-3 minutes, stirring occasionally. Add garlic, and cook for an additional 2 minutes. Stir in cooked pasta, tomatoes, salt, and pepper. Turn heat to low and stir in mozzarella and Parmesan cheese. Heat through.
  • Add basil and olives. Serve immediately.
