Avocado Taquitos aka "Flautas" - these corn tortillas are filled with avocados and cheese and fried to perfection!

Ingredients

  • 6-8 corn tortillas
  • 2-3 medium avocados
  • 3/4 cup Mexican blend cheese
  • salt and pepper to taste

Instructions

  1. Add oil to a frying pan and place on medium heat.

  2. Add avocados, cheese, salt and pepper to a bow and mix well. Spoon about ΒΌ cup into the middle of each corn tortilla. Roll up and place seam-side down in oil.
  3. Cook on both sides until golden. Place on paper towel-lined plate to allow excess oil to drip off.
  4. Serve warm and ENJOY!
