Breakfast Tacos Recipe

Who doesn't want a delicious taco for breakfast? Some eggs, bacon, cheese, and hash browns all in a soft mini tortilla! These Breakfast Tacos will become your morning mealtime hero!

Ingredients

  • 8 mini tortillas
  • 8 eggs
  • 1 cup shredded cheddar cheese
  • 4 pieces bacon halved
  • 2 cups cubed hash browns

Instructions

  1. Scramble eggs over medium low heat. And add cheese, salt and pepper (plus peppers if wanted).

  2. Cook up hashbrowns and bacon separately.

  3. To make tacos, add eggs, a scoop of hashbrowns and a half piece of bacon. Sprinkle with cilantro and serve with salsa.
