Sweet Potato Breakfast Recipe

Ingredients

  • 2 tablespoons olive oil
  • 2 medium sweet potatoes skin on diced into bite sized chunks
  • 1 white sweet potato diced into bite sized chunks
  • 1 ½ teaspoons sea salt
  • ½ teaspoon black pepper
  • 2 teaspoons minced garlic
  • ¼ red bell pepper chopped
  • ¼ green bell pepper chopped
  • garlic salt (with parsley flakes)
  • 4 eggs mixed
  • ½ cup cheese

Instructions

  • In a large skillet heat olive oil over medium high heat.
  • Add the potatoes along with the salt and pepper. Stir.
  • Cover the pan, lower the heat, and cook for 15 minutes. Stir every 4-5 minutes. Cook until potatoes are almost tender.
  • Remove the lid, turn to high heat and stir in the garlic, bell peppers, and eggs. Cook for another 5 minutes or until the eggs are cooked and the potatoes are tender and browned. 
  • Remove from heat, add cheese and serve.
