Cucumber Tomato Salad Recipe

Ingredients

  • 1 pint cherry tomatoes halved
  • 2 long, skinny English cucumbers sliced (about 2 cups)
  • 3-4 fresh basil leaves
  • mozzarella pearls optional

Dressing

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • pepper

Instructions

  • Combine the tomatoes, cucumbers and basil in a bowl. (Plus mozzarella pearls if you're using them.)
  • Whisk together dressing ingredients in a separate bowl. Pour over tomato and cucumber mixture and toss until well covered.
