Pop popcorn and pour into a large bowl, removing any un-popped kernels.
Break vanilla bark into squares and place in a medium pot over low heat. Cook, stirring constantly with a rubber spatula, until melted. Remove from the heat.
Pour candy coating over popcorn and mix until coated.
Add M&M’s and mix, then spread popcorn out onto a parchment paper–lined baking sheet. Let sit for 15 minutes, until hardened.
