Vegetable Soup Recipe

Loaded with potatoes, carrots, corn, green beans, and tomatoes, this vegetable soup is healthy, hearty, and super good.

Ingredients

  • 2 14.5 oz cans chicken or vegetable broth low sodium
  • 1 14.4 oz can diced tomatoes undrained
  • 1 tbsp onion powder
  • 1 cup carrots peeled, chopped
  • 1.5 cups golden potatoes peeled, cubed
  • 1 tbsp parsley
  • 1 tbsp Italian seasoning
  • 1 cup fresh green beans chopped
  • 1 cup corn canned or frozen
  • garlic salt and pepper to taste

Instructions

  • In a cooking pot add chicken broth, diced tomatoes, onion powder, carrots, potatoes, parsley, Italian seasoning. Bring to a boil.
  • Reduce the heat and add the green beans. Simmer the soup for 25 minutes. 
  • Add the corn and season with garlic salt and pepper. Simmer for another 5 minutes. Serve hot
