Ingredients

  • 2 skinless, boneless chicken breasts cooked and shredded
  • 4 scallions chopped
  • 1 stalk celery chopped
  • 1 avocado diced
  • 1/2 lime juiced
  • 2 tablespoons chopped fresh cilantro
  • 1 pinch cayenne pepper
  • salt and ground black pepper to taste

Instructions

  • In a medium bowl, mix together shredded chicken, chopped scallions, chopped celery, diced avocado, lime juice, chopped cilantro, cayenne pepper, salt and pepper.
  • Serve fresh on its own or on a sandwich or crescent roll.
