- 2 skinless, boneless chicken breasts cooked and shredded
- 4 scallions chopped
- 1 stalk celery chopped
- 1 avocado diced
- 1/2 lime juiced
- 2 tablespoons chopped fresh cilantro
- 1 pinch cayenne pepper
- salt and ground black pepper to taste
In a medium bowl, mix together shredded chicken, chopped scallions, chopped celery, diced avocado, lime juice, chopped cilantro, cayenne pepper, salt and pepper.
Serve fresh on its own or on a sandwich or crescent roll.
