Fresh Arugula salad is loaded with healthy greens, juicy tomatoes, and parmesan shavings with pine nuts and creamy avocado on top!

- 4 cups young arugula leaves rinsed and dried
- 1 cup cherry tomatoes
- 1/4 cup pine nuts
- 2 TB olive oil
- 1 TB rice vinegar
- 1/4 cup Parmesan cheese
- salt and pepper to taste
- 1 large avocado peeled, pitted and sliced
Combine arugula, tomatoes, nuts, oil, vinegar, Parmesan cheese and salt and pepper, in a large bowl with a lid. Cover, and shake well to mix.
Top with avocado slices and serve
