Strawberry Harvest Salad Recipe

Strawberry Harvest Salad tastes just like the salad at Zupa's! It's topped with a homemade Strawberry Vinaigrette dressing.

Ingredients

Salad

  • 6 cups chopped romaine lettuce
  • 2 large chicken breasts seasoned to taste, cooked and sliced
  • 1 apple thinly sliced
  • ½ cup Craisins
  • ½ cup shredded mozzarella cheese
  • ½ cup candied pecans
  • sliced strawberries for topping

Strawberry Vinaigrette

  • 1 cup strawberries tops cut off
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Place romaine in a salad bowl and top with chicken, apple slices, craisins, mozzarella, candied pecans and sliced strawberries.
  • To make the vinaigrette, combine all ingredients in a blender and blend until smooth. Add dressing to salad right before serving.

Notes

Make Ahead: Do not add the dressing until you are ready to serve it. You may also want to wait to slice and add the strawberries, so they do not get mushy. The rest of the salad can be assembled ahead and stored, covered, in the refrigerator for up to 24 hours.
Candied Pecans: You can buy candied pecans, or you can make your own. To make them, set a small nonstick cooking pan over medium heat and add ¾ cup chopped pecans, 1 ½ tablespoons brown sugar and ½ tablespoon butter. Stir constantly until the sugar and butter melt together. Continue stirring as it caramelizes; 2–3 more minutes. Spread pecans in a single layer on a plate to cool.
