Omelette Ingredients
- 2 large eggs
- salt and freshly ground pepper
- ½ tbsp unsalted butter
- ¼ shredded mozzarella cheese
Optional Fillings
- fresh spinach coarsely chopped
- diced bell pepper sauteed
Toppings
- cilantro
- baby tomatoes halved
- avocado diced
Turn skillet to medium heat.
Add eggs, salt, and pepper to a small mixing bowl and whisk until foamy.
Add butter to skillet and melt. Once melted, add eggs to the skillet and reduce heat to low.
Twirl the skillet so the bottom is evenly covered with eggs. Cook until the omelette has set at the edges.
Sprinkle with cheese, chopped spinach, and sauteed diced peppers. Fold the omelette in half and flip.
Cook for an additional 30 seconds, or until the cheese is melted.
Garnish with baby tomatoes, avocado, and cilantro.
