A filling breakfast

Omelets (you may also see the British spelling of Omelette) are made by frying whipped eggs and then folding in delicious fillings. It is a classic breakfast dish.

They are typically made in individual portions using 1-3 eggs per omelet. Using more eggs than that turns a Cheese Omelette into a frittata, which is basically the same thing, just larger and feeds more people. 

Egg dishes are a great way to start the day. We love Omelette recipes because they can easily be customized for each individual. Be sure to read the tips for a perfect Omelette every time.

How to make an omelette

PREP. Turn skillet to medium heat.

EGG MIXTURE. Add eggs, salt, and pepper to a small mixing bowl and whisk until foamy.

COOK. Add butter to skillet and melt. Once melted, add eggs to the skillet and reduce heat to low. Twirl the skillet so the bottom is evenly covered with eggs. Cook until the Omelette has set at the edges.

FILLING. Sprinkle with cheese, chopped spinach, and sauteed diced peppers. Fold the Omelette in half and flip.

COOK + SERVE. Cook for an additional 30 seconds, or until the cheese is melted. Garnish with baby tomatoes, avocado, and cilantro.

Omelette Filling

Filling. Once the beaten eggs hit the pan they will fry fairly quickly. Prepare any fillings to be used before you start cooking.

  • Raw foods should be cooked.
  • Refrigerated food should be brought to room temperature or heated up.
  • Larger ingredients need to be chopped.

Prepare the ingredients the night before and keep them stored in the fridge to save time in the morning.

Filling variations. Make as simple or elegant an Omelet as you choose. Some common fillings include:

  • Cooked vegetables: mushrooms, bell peppers, corn, jalapeños, broccoli florets, green onions, caramelized onions, artichokes, or asparagus
  • Herbs and spices: chopped spinach, parsley, a pinch of salt, pepper, garlic salt, red pepper flakes, or paprika
  • Cooked meats: crumbled Bacon, sliced Sausage, shredded chicken, or diced ham
  • Cheese: mozzarella, cheddar, gruyere, brie, parmesan, feta, or goat cheese

Recipe Tips + Side Ideas

Eggs. Use room-temperature eggs and beat the eggs until they reach an even shade of creamy yellow. 

Egg whites omelet. Remove the yolk and use just the whites for a lower-fat omelet. 

Cooking tips. A non-stick pan with sloping sides is the best choice. General sizes needed:

  • 8-inch skillet for a 2-egg omelet
  • 6-inch skillet for a single egg omelet
  • 10-inch skillet for a 3-egg omelet

I recommend cooking on medium to low heat for about 4-6 minutes. This ensures the eggs cook evenly without the bottom burning.

Don’t overstuff your omelet. A 2-egg omelette can accommodate around ⅓ cup of filling. Add less if you’d like, but too much and you risk breaking the egg.

Storing info

STORE cooked Omelettes. Once the cooked Omelette has cooled, store it in an airtight container or Ziploc bag in the fridge for up to 4 days.

FREEZE cooked Omelettes. Wrap each individual Omelette in plastic wrap and store them together in a freezer Ziploc. They’re best when eaten within 2 months but will last for up to 4 months.

Reheat. The easiest and quickest way to reheat an omelet is in the microwave. Remove from the plastic and wrap it in a paper towel. Cook for about 1 minute, or 2 minutes if frozen, flipping halfway until warm throughout. 

  • Stovetop: Warm up a nonstick skillet, then add the Omelet. Cook for about 2 minutes on each side until warm throughout. Place the lid on the skillet to help retain moisture.
  • Oven: Using the oven is a great way to reheat several omelets at a time. Preheat the oven to 350°F. Place the Omelets in a single layer on a baking sheet and heat for 10 minutes, flipping halfway.

    You would think one would need a recipe for such an easy dish but if you never made it before this is perfect. I added sausage crumbles as well.
