Ingredients

  • 4 small red potatoes washed, sliced and cut into bite-sized pieces
  • 1 head broccoli washed and chopped
  • 1 yellow bell pepper sliced and seeded
  • 1 red bell pepper sliced and seeded
  • 1 cup fresh green beans trim the ends or 1 cup sliced zucchini
  • 4 sausage links sliced
  • ¼ cup olive oil divided
  • 1 teaspoon garlic salt with parsley flakes
  • ½ teaspoon dried basil
  • pepper
  • fresh parsley if desired

Instructions

  • Preheat the oven to 400°F.
  • Line a baking sheet with lightly greased aluminum foil. (Parchment paper will work too)
  • Add the red potatoes to the baking sheet and drizzle with olive oil before seasoning with garlic salt and pepper. Bake the potatoes for 10 minutes.
  • Remove the potatoes from the oven and add all the veggies and sausage. Drizzle the mixture with the remaining olive oil and seasonings. Make sure everything is coated by tossing the mixture with tongs or a wooden spoon.
  • Bake for 20 minutes.
