Ingredients

Omelette Ingredients

  • 2 large eggs
  • salt and freshly ground pepper
  • ½ tablespoon unsalted butter
  • ¼ shredded mozzarella cheese

Optional Fillings

  • fresh spinach coarsely chopped
  • diced bell pepper sauteed

Toppings

  • cilantro
  • baby tomatoes halved
  • avocado diced

Instructions

  • Heat a medium-sized skillet over medium heat.
  • In a small mixing bowl, whisk together eggs, salt, and pepper until foamy.
  • Add the butter to the hot skillet and allow to completely melt. Pour eggs into the skillet and reduce heat to low.
  • Move the skillet in a circular motion so the bottom is evenly covered with eggs. Cook until the omelette has set at the edges.
  • Sprinkle with cheese, chopped spinach, and sauteed diced peppers. Fold the omelette in half and flip.
  • Cook for an additional 30 seconds, or until the cheese is melted.
  • Garnish with baby tomatoes, avocado, and cilantro.
