Omelette Ingredients
- 2 large eggs
- salt and freshly ground pepper
- ½ tablespoon unsalted butter
- ¼ shredded mozzarella cheese
Optional Fillings
- fresh spinach coarsely chopped
- diced bell pepper sauteed
Toppings
- cilantro
- baby tomatoes halved
- avocado diced
Heat a medium-sized skillet over medium heat.
In a small mixing bowl, whisk together eggs, salt, and pepper until foamy.
Add the butter to the hot skillet and allow to completely melt. Pour eggs into the skillet and reduce heat to low.
Move the skillet in a circular motion so the bottom is evenly covered with eggs. Cook until the omelette has set at the edges.
Sprinkle with cheese, chopped spinach, and sauteed diced peppers. Fold the omelette in half and flip.
Cook for an additional 30 seconds, or until the cheese is melted.
Garnish with baby tomatoes, avocado, and cilantro.
