  • 1 egg white
  • 1 teaspoon cold water
  • 4 cups whole raw almonds
  • ½ cup sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

  • Preheat the oven to 250 degrees F. Lightly grease a 10-x-15-inch jelly roll pan and set aside.
  • In a small bowl, lightly beat egg white. Add water and beat until frothy. Add almonds and stir until well coated.
  • In a separate bowl (or in a resealable plastic bag), mix sugar, cinnamon and salt. Sprinkle over nuts and toss to coat, then spread nuts evenly on the greased pan.
  • Bake for 1 hour, stirring occasionally, until golden. Let cool before enjoying.

Make Ahead: You can make these in advance and store in an airtight container for 1 week at room temperature, 2 weeks in the refrigerator or 2 months in the freezer.
Variations: Change up the flavor of your candied almonds by adding 2 teaspoons vanilla extract or vanilla bean paste, adding 2 teaspoons pumpkin pie spice or replacing the cinnamon with a pinch of cayenne pepper.
