Asparagus Bundles

- 2 pounds fresh asparagus, trim ends
- 12 slices bacon
- ½ cup butter
- ½ cup brown sugar
- 1 tablespoons soy sauce
- ½ teaspoon garlic salt (with parsley flakes)
- ¼ teaspoon pepper
Preheat oven to 400°F.
Separate asparagus into 12 bundles.
Wrap 1 piece of bacon around each bundle and secure it with a toothpick.
Place bundles in a casserole dish.
In a small pot, combine ½ cup butter, ½ cup brown sugar, 1 tablespoon soy sauce, ½ teaspoon garlic salt, and ¼ teaspoon pepper. Bring to a boil and then pour over the asparagus bundles.
Cook for 20-25 minutes.
Recipe tips.
- Bend the asparagus stalk near the bottom. It will naturally snap at the point where the tough, woody part ends, or use a knife to cut 1-2 inches off the bottom.
- Use regular-cut bacon as thicker slices will not cook all the way.
- After the bundles have cooked use the oven broiler to get crispier bacon.
Grilling directions:
- Allow the wrapped asparagus to marinate in the sauce for 3-5 minutes. Heat the grill to 400-450ºF.
- Place the bacon-wrapped asparagus bundles directly on the grill grates.
- Close the grill lid and cook for 5-8 minutes per side, or until the bacon is crisp and the asparagus is tender.
Prep ahead of time. Wrap the asparagus with bacon a day in advance, cover it with plastic wrap, and keep it refrigerated. Add the butter sauce before baking.
Store leftovers in an airtight container in the fridge for 1-2 days. Reheat in a 375°F oven.
