Brie Phyllo Tarts Recipe

Brie Phyllo Tarts are easy bite size appetizers with flaky phyllo cups, creamy Brie, apricot preserves, and chopped pecans.

Ingredients

  • 1 (8 ounce) wedge Brie cheese rind removed, cut into 1/2 inch pieces
  • 15 frozen phyllo tart cups
  • 1/2 cup apricot preserves
  • 1/2 cup pecans chopped

Instructions

  • Preheat oven to 350° F.
  • Place phyllo cups onto a parchment paper lined baking sheet.
  • Gently squish a piece of Brie between two fingers as it will make it fit into the tart better. Place Brie pieces in each cup and top with 1/2 teaspoon apricot preserves.
  • Bake tarts for 7 minutes or until cheese is melted.
  • Garnish with chopped pecans and serve warm.

Notes

Recipe Tips.
  • Remove the Brie rind so the cheese melts more smoothly in the tart cups.
  • Squish each Brie piece slightly so it fits neatly inside the phyllo shell.
  • Use about 1/2 teaspoon apricot preserves per tart so the filling does not overflow.
  • Bake just until the Brie is melted and the phyllo cups are warm and crisp.
  • Make-ahead tip: cut the Brie and chop the pecans ahead of time, then assemble and bake the tarts right before serving.
Store. Refrigerate leftovers in an airtight container for up to 2 days. Warm in the oven at 300°F until the cheese softens and the shells crisp back up. These are best served warm right after baking.
