- ½ cup butter
- ⅔ cup sugar
- 2 large eggs
- 1 cup buttermilk
- ½ teaspoon baking soda
- 1 cup cornmeal
- 1 cup all-purpose flour
- ¼ teaspoon salt
Preheat oven to 375 degrees.
Melt butter in the microwave and pour into a medium bowl.
Add eggs to the butter and whisk until blended in. Pour in buttermilk and baking soda and mix.
Add the remaining dry ingredients - cornmeal, flour and salt and mix well until no longer lumpy.
Pour this into a greased 8x8 inch pan and bake for 30-32 minutes or until a toothpick inserted in the center comes out clean.
