Chocolate Mint Cookies
Chewy chocolate mint cookies are rich and chocolatey, studded with mint chips for one AMAZING super simple cookie!

- 1 cup butter, softened
- 1½ cups sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- ⅔ cup unsweetened cocoa powder
- ¾ teaspoon baking soda
- ½ teaspoon salt
- 2 cups mint chips
Preheat oven to 350°F.
In a stand mixer, cream butter and sugar. Add eggs and vanilla and mix until fluffy.
Add flour, cocoa, baking soda, and salt and mix until combined.
Fold in mint chips.
Scoop cookies out onto a greased cookie sheet and bake for 8-10 minutes.
Picture perfect. Once you have scooped the dough onto the baking sheet, then add 5 mint chips to the top of each cookie dough ball. As the cookies bake they spread a little allowing the chips to nestle perfectly on top.

Store baked cookies in an airtight container at room temperature for 3-4 days, or in the freezer for 2-3 months.
