Date Balls

Our 4 ingredient date balls are filled with sweet dates, coconut and pecans. They are an easy-to-make healthy vegan snack!

Ingredients

  • 2 cups pecans
  • 1 cup sweetened coconut
  • 2 cups medjool dates, pitted
  • 1 teaspoon vanilla extract

Instructions

  • Add the pecans and coconut to the food processor and process until chopped and fine.
  • Add the pitted dates and vanilla and process again until the mixture is crumbly and sticky. Don't do this for too long, or it will become a little oily.
  • Use a large cookie scoop to scoop out the mixture and then roll into a ball and place on a parchment paper lined baking sheet. Refrigerate for an hour and then store in a Tupperware in the fridge for up to 1 week.

Notes

Troubleshooting the consistency. If the mixture is too wet add more chopped nuts, coconut flakes, or oats. If the mixture is too crumbly add more dates, some nut butter or even a bit of honey. 
Store the date balls in the fridge for up to 10 days. Separate layers with wax or parchment paper so they don't stick together.
Freeze. Place the balls in a single layer on a baking sheet and flash-freeze. Once frozen, transfer them to a freezer safe Ziploc and freeze for up to 3 months.
