Fruit Pizza

Fruit pizza is an all time favorite that features a sugar cookie crust, creamy frosting, and a customizable, colorful fruit topping.

Ingredients

  • ¾ cup sugar
  • ½ cup unsalted butter
  • 1 egg
  • cups + 2 tablespoons all-purpose flour
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • teaspoon salt

Toppings

  • bananas, strawberries, kiwis, blackberries, pineapples, blueberries

Frosting

  • 1 (8-ounce) package cream cheese, softened
  • ½ cup powdered sugar
  • 2 tablespoons pineapple juice, or vanilla extract

Instructions

  • Preheat the oven to 350°F.
  • In a medium bowl, cream sugar, butter, and egg with a hand mixer.
  • In another bowl, mix flour, cream of tartar, baking soda, and salt.
  • Add dry ingredients to creamed mixture and mix until well combined.
  • Dip hands in flour and spread dough onto a lightly greased pizza pan until it is approximately ¼ inch thick. Leave 1–2 inches around the edges of the pan for dough to expand.
  • Bake for 10 minutes, then let cool.
  • While crust cools, make the frosting. In a medium bowl, cream together cream cheese, sugar, and pineapple juice with the hand mixer. Spread over cooled cookie crust.
  • Right before serving, add desired fruit in the pattern you prefer. Dip bananas in pineapple juice to keep them from getting dark fast.
  • Keep refrigerated for up to 3 hours until ready to serve.

Recipe Tips.
  • Treat the slices of fruit with lemon juice or Ball’s Fresh Fruit powder before placing them on the pizza to prevent browning. Add bananas right before serving.
  • Let the cookie crust cool completely before frosting.
  • Serve the same day for the freshest fruit.
  • Chill the pizza briefly before slicing for cleaner cuts. Use a round pizza cutter to slice this colorful fruit pizza. A large kitchen knife will also work. 
  • Instead of the cream cheese frosting, use different flavored pudding, Nutella, Lemon Curd, or your favorite Yogurt Fruit Dip.
  • Varied decorations: For Memorial Day or the Fourth of July use red fruit like strawberries or raspberries, blueberries, and bananas. Christmas, use red fruit with kiwis and accent with a bright fruit like mandarin oranges or pineapple. Make a rainbow, start at the center with red fruit and work outward, or line the perimeter with red and work inward. Use layers of red, orange, yellow, green, blue, and purple fruits.Use different colored fruit to create stripes, circles/spiral patterns, or medallion patterns.
Make ahead of time. Prepare the ingredients a day beforehand, but don’t assemble the pizza until 2-3 hours before serving.
  • Crust - cook, cool and cover. Store at room temperature.
  • Frosting - store in an airtight container in the fridge.
  • Sliced fruit - store in separate containers in the fridge. Be cautious of fruits that become soggy or brown quickly. I suggest not cutting those until you assemble the pizza. 
STORE. Leftover pizza can be covered and stored in the fridge for a day or two. The fruit and crust will become more and more mushy the longer it's stored, so it’s best to eat leftovers fairly quickly.
Pressed for time. If you do not have time to make a homemade crust, you can easily grab a package of sugar cookie dough from the market. Press the dough into the pan and bake at 375°F for about 13 minutes.
