- 1 cup long-grain rice uncooked
- 4 cups water divided
- 2 cinnamon sticks
- 2 cups 2 % milk
- 1 (12oz) can evaporated milk
- 1 tablespoon vanilla extract
- ⅔ cup sugar
- 2-3 teaspoons Castilla, optional (secret ingredient)
Add rice to a colander and rinse.
Add uncooked rice, 2 cups water, and cinnamon sticks to a bowl and let soak in the fridge for 8-12 hours.
Add this mixture to your blender, along with remaining water. Blend for 2-4 minutes. Pour through a cheesecloth to get rid of all chunks (you may need to pour it through twice).
Add this to a pitcher, along with milk, evaporated milk, vanilla, sugar and castilla. Chill in the fridge for at least 2 hours. Strain through cheesecloth one more time before serving, if desired.
