Ingredients

  • 3 cups powdered sugar

  • 1 teaspoon vanilla extract

Instructions

  • Sift powdered sugar and add to a large mixing bowl, set aside.
  • In a medium saucepan over medium heat, melt butter.
  • Stir in brown sugar and milk.
  • As soon as bubbles start showing up, set a timer for 2 minutes and continue boiling.
  • Remove from heat after 2 minutes and stir in peanut butter and vanilla.
  • Pour peanut butter mixture over powdered sugar and beat until smooth. Pour into a parchment paper lined 8 x 8" baking dish.
  • Chill until fudge is set. Cut into 2 x 2 squares.

Notes

Recipe Tips.
  • Sift the powdered sugar first so the fudge mixes up as smooth as possible.
  • Start the 2-minute timer as soon as bubbles begin to show in the saucepan.
  • Stir the peanut butter and vanilla in right after removing the pan from the heat so everything melts together smoothly.
  • Line the pan with parchment paper so the fudge lifts out easily before cutting.
  • Make-ahead tip: make the fudge a day or two ahead and keep it chilled until ready to cut and serve.
