A refreshing salad filled with cannellini beans, pepperoni, tomatoes, Feta and Parmesan cheese and topped with a homemade Herb Dressing!

  • 10 oz salad
  • 1 cup grape tomatoes halved
  • 15 oz cannellini beans rinsed and drained
  • 1 cup pepperoni slices
  • 1/2 cup feta cheese
  • 1/2 cup shaved parmesan cheese
  • 2 cups croutons

Herb Dressing (or Italian Dressing)

  • 1/2 cup olive oil extra virgin
  • 1/2 cup white balsamic vinegar
  • 1/4 cup parsley chopped
  • 1/4 cup basil chopped
  • 2 tsp garlic minced
  • 1 tsp sea salt
  • 1/2 tsp garlic pepper


  • Add salad to a bowl and top with the rest of the ingredients minus the croutons and dressing.
  • Right before serving make dressing by blending all ingredients in a blender. Add to salad, along with croutons and toss. ENJOY!
