Pizza Salad Recipe
A refreshing salad filled with cannellini beans, pepperoni, tomatoes, Feta and Parmesan cheese and topped with a homemade Herb Dressing!
- 10 oz salad
- 1 cup grape tomatoes halved
- 15 oz cannellini beans rinsed and drained
- 1 cup pepperoni slices
- 1/2 cup feta cheese
- 1/2 cup shaved parmesan cheese
- 2 cups croutons
Herb Dressing (or Italian Dressing)
- 1/2 cup olive oil extra virgin
- 1/2 cup white balsamic vinegar
- 1/4 cup parsley chopped
- 1/4 cup basil chopped
- 2 tsp garlic minced
- 1 tsp sea salt
- 1/2 tsp garlic pepper
Add salad to a bowl and top with the rest of the ingredients minus the croutons and dressing.
Right before serving make dressing by blending all ingredients in a blender. Add to salad, along with croutons and toss. ENJOY!
