Cucumber Tomato Salad Recipe

- 1 pint cherry tomatoes halved
- 2 long, skinny English cucumbers sliced (about 2 cups)
- 3-4 fresh basil leaves
- mozzarella pearls optional
Dressing
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp sugar
- 1/2 tsp salt
- pepper
Combine the tomatoes, cucumbers and basil in a bowl. (Plus mozzarella pearls if you're using them.)
Whisk together dressing ingredients in a separate bowl. Pour over tomato and cucumber mixture and toss until well covered.
