- ½ cup butter, softened
- ¾ cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 1½ cups flour
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon cream of tartar
- ½ cup rainbow sprinkles
Preheat oven to 350°F. Line a baking sheet with parchment or a silicone baking mat.
In a large bowl or the bowl of a stand mixer, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla until well blended. Add the flour, salt, baking powder, baking soda, and cream of tartar, and mix until a dough forms. Fold in sprinkles until well distributed.
Chill the dough for at least 30 minutes.
Scoop the dough into 1-inch balls and place on the prepared baking sheets, sprinkling with additional sprinkles if desired.
Bake 10 minutes, then remove and let cool for 5-10 minutes on the baking sheet before removing to a cooling rack. The cookies will look very soft and undercooked when you pull them out, but they will cook more as they cool on the pan. Enjoy!
Recipe tips.
- We used soft rainbow jimmies; for a crunchier texture, try using nonpareil sprinkles. Holiday-shaped sprinkles are also fun to use.
- Chilling the dough helps prevent the cookies from spreading too much during baking and helps the flavors meld.
- Easily switch up the flavor of the dough by using different types of extracts, like almond or lemon extract.

Store baked cookies in an airtight container for about 4 days or freeze them for 2-3 months.
