- 2-3 boneless, skinless, chicken breasts, cut into 1-inch pieces
- 8 ounces bacon, cut into thirds
- ½ - 1 cup BBQ sauce, We love Sweet Baby Ray's
- toothpick
Line a large baking sheet with aluminum foil and lightly spray with cooking spray.
Wrap each piece of cubed chicken with a small strip of bacon. Secure with a toothpick and place on your baking sheet. Brush with desired amount of BBQ sauce.
Bake at 350°F for 45 minutes - 1 hour. Remove from oven and add more BBQ sauce as desired. Serve warm.
Recipe Tips:
- Do not overlap the bacon too much, a single wrap helps it crisp while the chicken cooks through.
- Line the pan with foil and spray, the glaze gets sticky and this makes cleanup simple.
- Brush once before baking, then again right after for a glossy finish and big barbecue flavor.
- Keep warm for serving by transferring cooked bites to a slow cooker set to warm, they stay saucy and tender.
Prep ahead. Assemble, cover, and store in the fridge for up to 24 hours. To freeze, place in a single layer and store in a freezer-safe container in the freeer for up to 2 months.
- Bake from frozen: bake at 375°F for 28 to 35 minutes, turning once. Brush again in the last 5 minutes
Store leftovers in an airtight container in the fridge for 3 to 4 days, or freeze in a single layer then bag for up to 2 months.
- Reheat at 350°F on a lined sheet until hot and 165°F, 10 to 15 minutes if thawed or 18 to 22 minutes from frozen, brushing with fresh BBQ sauce.
