Cake Mix Snickerdoodles Recipe

Cake Mix Snickerdoodles are soft, chewy, and easy with yellow cake mix, eggs, oil, and a sweet cinnamon sugar topping.

Ingredients

  • 1 box Duncan Hines Classic Yellow Cake Mix
  • 3 tbsp sugar
  • 1 tbsp cinnamon
  • 2 large eggs
  • 1/4 cup vegetable oil

Instructions

  • Combine sugar and cinnamon in a bowl and mix. Set aside.
  • Combine cake mix, eggs and oil in a bowl and mix with a wooden spoon until all combined. Use medium cookie scoop and scoop onto greased cookie sheet. Sprinkle with sugar and cinnamon mix. Using the bottom of a cup, flatten the cookies a bit.
  • Bake at 375 for 7-9 minutes. Let Cool & ENJOY!

Notes

Recipe Tips.
  • Mix the cake mix, eggs, and oil with a wooden spoon until fully combined.
  • Use a medium cookie scoop so the cookies are similar in size and bake evenly.
  • Grease the cookie sheet well or use parchment paper for easier cleanup.
  • Flatten the cookies slightly with the bottom of a cup before baking.
  • Make-ahead tip: mix the dough ahead and refrigerate it, then scoop, sprinkle, flatten, and bake when ready.
Store. Keep cooled cookies in an airtight container at room temperature for up to 5 days.
Freeze. Freeze baked cookies: Freeze in a freezer-safe container for up to 3 months.
Freeze dough: Scoop dough balls and freeze for up to 3 months, then thaw slightly before adding cinnamon sugar and baking. Let frozen cookies thaw at room temperature before serving.
